Philosophy

Embudo Station believes that a healthy community depends on neighbors supporting each other. For this reason we try to only offer products that help contribute to the Northern New Mexico economy, from the beers we have on tap, to wine, breads, lettuces, meats and even the reclaimed silverware, we always look close to home first.

We believe that people should have the right to know where their food was grown and who prepared it. It may be easier and less expensive to get large boxes of imported products- but by doing so you lose the unique character of heirloom vegetables and heritage breeds that have been passed from generation to generation. We would never want to live in a world where all tomatoes come half ripe and each weigh 5 ounces. For us, the thrill of cooking comes from opening a basket filled with a kaleidoscope of different sized heirloom tomatoes still warm from the field. Good food requires lots of love.
